Recipe: Healthy Banana Coconut Bread

Autumn is here and as far as I’m concerned nothing goes better with this season than a good book and a delicious cake with a cup of tea.

I was inspired by this recipe by Jamie Oliver and made some adaptations to fit my dietary needs. It’s so delicious I came right here to write the recipe so I wouldn’t eat the whole thing.

Ingredients

  • 2 medium bananas
  • 1/4 cup, unpacked Brown Sugar
  • 1/4  cup shredded coconut
  • 1 cup flour, all purpose
  • 1/2 cup whole wheat flour
  • 3 medium eggs
  • 1 cup greek yogurt
  • 1 tbsp cinnamon
  • 1 tsp Salt
  • 1 tsp Baking Powder

Directions

Pre-heat oven to 180ºC.
Combine the flour, baking powder, coconut, salt and cinnamon and mix well.
In another bowl beat the eggs lightly and add the mashed bananas, the yogurt and the brown sugar.
Join the dry and wet ingredients without over-mixing.
Pour mix into a pan and bake for about 35 minutes (check with a toothpick).
